Chickpea salad with feta, tomatoes, basil, and honey garlic vinaigrette - a perfect summer sensation.
Ingredients:
  • 2 (19 ounce) cans chickpeas (garbanzos), drained and rinsed
  • 1 pint small cherry tomatoes, halved
  • 0.5 cup crumbled goat-milk feta cheese
  • 3 tablespoons finely shredded basil leaves
  • 2 tablespoons honey
  • 3 large cloves garlic, minced
  • 3 tablespoons red wine vinegar
  • 3 tablespoons cider vinegar
  • 3 tablespoons olive oil
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon salt
Instructions:
  • Combine chickpeas, tomatoes, tangy feta cheese, and fragrant basil in a spacious mixing bowl.
  • For the dressing: Microwave honey in a small glass bowl for 30 seconds to soften. Mix in garlic, red wine vinegar, cider vinegar, olive oil, black pepper, cayenne pepper, and salt until well combined.
  • Drizzle the dressing onto the chickpea salad and mix well to ensure every bite is perfectly coated. Seal the mixing bowl with plastic wrap and chill in the refrigerator for one hour before enjoying.
