Flavorful chickpea salad packed with goodness.
Ingredients:
  • 0.63 gm ground cumin
  • 187.50 ml drained canned chickpeas
  • 375.00 ml flat-leaf parsley, chopped
  • 125.00 ml mint leaves, roughly chopped
  • 1 small red onion, halved, thinly sliced
  • 1 Lebanese cucumber, thinly sliced
  • 40.00 ml pomegranate juice (see note)
  • 27.30 gm olive oil
Instructions:
  • Mix all ingredients in a bowl and season with salt and pepper. Stir well, cover, and let sit for 15 minutes before serving with fish.
