Sizzling Colorado pork chili slow-cooked with chili powder and cumin for rich, hearty flavor. Simmer for 2 hours for maximum taste.
Ingredients:
  • 3 tablespoons all-purpose flour
  • 1.5 pounds boneless pork, cut into 1 inch cubes
  • 1 tablespoon bacon drippings, or vegetable oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon all-purpose flour
  • 0.25 cup chopped onion
  • 1 (4 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • salt and black pepper to taste
  • 3 cups water
Instructions:
  • In a plastic bag, combine 3 tablespoons of flour with the pork. Shake to evenly coat the pork with flour, then set aside.
  • In a Dutch oven over medium-high heat, sizzle the bacon drippings and vegetable oil. Brown the pork evenly for about 5 to 8 minutes.
  • Incorporate 1 tablespoon of flour and continue to cook and stir for 3 minutes. Add onion, tomato sauce, chili powder, cumin, garlic powder, salt, pepper, and water. Bring to a boil, then lower heat to simmer until the pork is tender and falling apart, around 1 1/2 to 2 hours.
