Quick and delicious fusion dish featuring taco-flavored cheese and mild chilis for a flavorful kick without overwhelming heat.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2 1/3 cups uncooked rotini pasta (7 oz)
  • 1 teaspoon chili powder
  • 2 1/4 cups hot water
  • 1 can (14 1/2 oz) diced tomatoes with zesty mild green chiles, undrained
  • 2 cups shredded taco-flavored cheese (8 oz)
  • Chili powder, if desired
Instructions:
  • Cook the ground beef in a 12-inch skillet over medium-high heat, stirring frequently, until fully cooked; then drain the excess fat.
  • Add uncooked pasta, chili powder, water, and tomatoes to the pot. Bring to a boil, stirring often. Lower heat to medium-low, cover, and let it simmer for 10 to 12 minutes, stirring occasionally, until pasta is cooked to tender perfection.
  • Take the pan off the heat and allow it to rest for 5 minutes. Mix in the cheese until it melts. Sprinkle with extra chili powder for an added kick.
