Indulge in a tantalizing fusion of chili dogs and mac and cheese for a uniquely delightful and mouthwatering experience.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 2 generous teaspoons kosher salt, plus more to taste
  • 3 tablespoons chili powder
  • 2 teaspoon  ground cumin
  • 1  teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper, or to taste
  • 1/2 teaspoon dried oregano
  • 4 cloves garlic, minced
  • 1 cup diced green peppers
  • 1 pound hot dogs, sliced
  • 1 (28-ounce) jar crushed tomatoes (or 3 1/2 cups tomato sauce or puree)
  • 2 1/2 cups water
  • 2 rounded cups elbow macaroni
  • 8 ounces shredded white Cheddar cheese
  • 8 ounces shredded Monterey Jack cheese
  • sliced green onions for the top, optional
Instructions:
  • Heat a generous amount of olive oil in a large pot over high heat. Add the beef and cook and stir, breaking it up with a spoon or spatula, for about 2 minutes. Then add the onions and salt, continue cooking and stirring until the beef is crumbly and the onions turn translucent, around 5 minutes.
  • Sprinkle in the chili powder, cumin, paprika, black pepper, cinnamon, cayenne, dried oregano, and garlic. Stir and cook for approximately 2 minutes.
  • Combine peppers, sliced hot dogs, crushed tomatoes, and water in a pot. Stir well and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, for a minimum of 30 minutes or until desired doneness. Season to taste before serving.
  • When the chili is almost done, boil a large pot of lightly salted water. Add macaroni and cook for 1 minute less than directed on the package, until almost tender, about 8 to 11 minutes.
  • Preheat the oven to 400°F (200°C) while you get started.
  • Remove the pot of chili from heat, drain the macaroni, and mix it into the chili. Stir until well combined, then transfer the mixture to a large, deep (15x10-inch) baking dish.
  • Combine the Cheddar and Monterey Jack cheeses in a bowl, then sprinkle about 60% of the cheese over the chili mixture. Gently fold the cheese into the casserole using a spoon until well incorporated.
  • Sprinkle the remaining cheese evenly on top and gently press it into the surface using the tip of a spoon.
  • Place the dish in the preheated oven and bake until it's bubbly, which should take around 30 to 35 minutes. Allow it to rest for 15 minutes before serving, and garnish with green onions.
