Vibrant summer salad with a mix of fresh colorful veggies like tomatoes, zucchini, squash, and bell peppers.
Ingredients:
  • 2 tomatoes, cut into chunks
  • 1 large zucchini, cut into chunks
  • 1 large yellow squash, cut into chunks
  • 0.5 green bell pepper, diced
  • 0.5 sweet red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.25 cup olive oil
  • 0.25 cup red wine vinegar
  • 3 tablespoons water
Instructions:
  • In a large bowl, combine tomatoes, zucchini, yellow squash, green bell pepper, red onion, garlic, basil, salt, and black pepper. Drizzle with olive oil, vinegar, and water, then toss well. Chill in the refrigerator for approximately 1 hour before serving.
