Elevate chilled pasta salad with chicken and vibrant vegetables using fresh ginger and soy sauce for a zesty Asian twist.
Ingredients:
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons grapeseed oil
  • 1 tablespoon sesame oil
  • 1 tablespoon canola oil
  • 1.5 teaspoons finely chopped fresh ginger
  • 1 teaspoon white sugar
  • 1 clove garlic, minced
  • 3 whole skinless, boneless chicken breasts
  • 1 (12 ounce) bottle teriyaki marinade (such as Lawry's® Teriyaki with Pineapple)
  • 1 (16 ounce) package thin spaghetti
  • 1 large tomato, diced
  • 1 yellow bell pepper, diced
  • 1 cup fresh broccoli florets
  • 0.5 teaspoon sea salt
  • 1 (3 ounce) can chow mein noodles
  • 1 (8 ounce) package snow peas
  • 0.5 teaspoon chile-garlic sauce (such as Sriracha®)
  • 6 sprigs fresh cilantro
Instructions:
  • In a blender, mix soy sauce, rice wine vinegar, grapeseed oil, sesame oil, canola oil, ginger, sugar, garlic, and black pepper until smooth. Chill dressing in the refrigerator for at least 30 minutes.
  • Cut each chicken breast in half horizontally to create 6 pieces. Combine chicken and teriyaki marinade in a large zip-top bag. Seal securely and massage the bag until chicken is fully coated. Refrigerate for a minimum of 30 minutes.
  • Bring a big pot of lightly salted water to a boil. Cook thin spaghetti until al dente, about 6 minutes. Drain, rinse with cold water, then refrigerate until ready to use for the salad.
  • Heat up your outdoor grill to medium-high and give the grate a light coating of oil.
  • Take the chicken out of the marinade and gently shake off any extra. Dispose of the rest of the marinade.
  • Grill the chicken until fully cooked, about 6 minutes per side or until juices run clear and internal temperature reaches 165°F (74°C). Let it rest for 5 minutes, then slice into strips.
  • In a large mixing bowl, combine cold pasta with tomato, bell pepper, broccoli florets, salt, and black pepper. Toss ingredients gently with chilled dressing using tongs. Serve on a plate, sprinkle with chow mein noodles, and serve alongside chicken strips and snow peas. Garnish with chile-garlic sauce and a sprig of fresh cilantro.
