Chilli and parmesan roast lamb recipe

Irresistible tender roast infused with spicy chilli and sharp parmesan for a unique, addictive flavor.
Ingredients:
  • 1.3kg Lamb Boneless Shoulder Roast
  • 150g chunky chilli with cashew & parmesan dip
  • 6 thyme sprigs
  • 750g baby potatoes, thickly sliced
  • 500g gold sweet potato, thickly sliced
  • 2 red onions, cut into 1cm-thick slices
  • 3 celery sticks, trimmed, thickly sliced
  • 2 carrots, peeled, thickly sliced
  • 36.40 gm olive oil
Instructions:
  • Preheat the oven to 180°C. Lay the lamb flat on a clean work surface. Spread the dip over the center of the lamb. Roll it up and tie it with kitchen string at 5cm intervals. Garnish with fresh thyme sprigs.
  • In a large roasting pan, layer the potato, sweet potato, onion, celery, and carrot. Place the lamb on top. Drizzle everything with oil, season generously, and roast for 1¼ hours until the lamb reaches your desired doneness. Cover with foil and let it rest for 10 minutes before serving.
  • Arrange the lamb and vegetables elegantly on a platter for serving.
