Wholesome veggie stir-fry perfect for a quick weeknight meal.
Ingredients:
  • 125.00 ml unsalted roasted cashew nuts
  • 36.40 gm peanut oil
  • 3 green onions, sliced diagonally
  • 150g Swiss brown button mushrooms, thickly sliced
  • 1 bunch snake beans, cut into 8cm lengths
  • 1 bunch Chinese broccoli (gai lum) or choy sum, trimmed, stems chopped, leaves separated
  • 2 long red chillies, deseeded, thinly sliced
  • 1 quantity Sweet chilli and lime stir-fry sauce (see notes)
  • steamed jasmine rice, to serve
Instructions:
  • In a hot wok, stir-fry cashews until golden, about 4 to 5 minutes. Then, transfer them to a plate and wipe the wok clean with a paper towel.
  • Preheat a hot wok, then coat with oil. Add green onions, garlic, mushrooms, snake beans, broccoli stems, and chilies, stir-frying for 1 minute.
  • Pour the sauce over the vegetables, cover, and cook for 1 minute until vegetables are tender. Uncover, toss in broccoli leaves, stir-fry for 1 to 2 minutes until wilted. Sprinkle cashews on top, mix well, and serve over rice.
