Elevate the dish with a garnish of fried egg, coriander, and sliced chili for a gourmet touch.
Ingredients:
  • 300g brown rice
  • 600g Beef Eye Fillet Steak, thinly sliced
  • 1 bunch baby broccoli, halved diagonally
  • 125g pkt baby corn, halved lengthways
  • 20.00 ml ginger, finely grated
  • 4 spring onions, thinly sliced
  • 1 long red chilli, thinly sliced
  • 31.50 gm salt-reduced soy sauce
  • 4 Free Range Eggs
  • 62.50 ml coriander leaves
  • Sliced red chilli, extra to serve
Instructions:
  • Prepare the rice in a saucepan of salted boiling water as per packet instructions. Drain and let it cool.
  • In a wok set over medium-high heat, heat half of the oil. Season the beef and cook in batches for 1-2 mins until browned. Transfer to a plate.
  • Combine baby broccoli, baby corn, and 1/4 cup (60ml) water in the wok and cook for 3 minutes. Add ginger, garlic, spring onion, and chili, and cook for an additional 2 minutes. Mix in the beef, soy sauce, and rice, stir-frying for 3 minutes until heated through.
  • Heat a frying pan over medium heat. Cook eggs for 3 minutes or until desired doneness. Divide the fried rice among bowls and garnish with a fried egg, fresh coriander leaves, and additional sliced chili.
