Try these quick and delicious one-pot chilli beef wraps for a satisfying meal with minimal cleanup.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, coarsely chopped
  • 1 garlic clove, crushed
  • 5.00 gm ground cumin
  • 5.00 gm paprika
  • 1/2 tsp chilli powder
  • 500g beef mince
  • 1 x 400g can diced tomatoes
  • 44.40 gm tomato paste
  • 1 x 420g can red kidney beans, rinsed, drained
  • 8 flour tortillas, warmed
  • 1 avocado, halved, stone removed, peeled, chopped
  • Light sour cream, to serve
Instructions:
  • In a sizzling pan, sauté onions and garlic in heated oil until onions are tender, about 2 minutes.
  • Sprinkle in the cumin, paprika, and chili powder. Cook while stirring for 1 minute until fragrant.
  • Brown the mince on high heat, breaking up any lumps with a wooden spoon, until it changes color. Stir in the tomato, tomato paste, and beans. Bring it to a boil, then lower the heat and simmer the mixture for 5 minutes until thickened.
  • Spoon the savory beef mixture onto the tortillas, fold them to seal in the delicious filling, and then transfer to individual serving plates. Garnish generously with fresh avocado slices and a dollop of sour cream on the side.
