Whip up a quick and delicious spicy chicken noodle stir fry for dinner.
Ingredients:
  • 60ml chilli sauce
  • 60ml soy sauce
  • 2 (about 200g each) skinless chicken breast fillets, thinly sliced
  • 450g packet fresh thin hokkein noodles
  • 400g packet fresh stir-fry vegetables
  • 75g chopped roasted peanuts
Instructions:
  • In a bowl, combine 1 tablespoon of oil, chilli sauce, soy sauce, and chicken. Mix well to coat the chicken evenly.
  • Gently shake the hokkien noodles to separate them.
  • In a heated wok or deep frypan with the remaining oil, stir-fry the drained chicken from the marinade until lightly golden, about 5 minutes.
  • Combine the stir-fry vegetables, Hokkien noodles, reserved marinade, and 1-2 tablespoons of water in the wok. Stir-fry for 3-4 minutes until the vegetables are cooked to a perfect crunchiness.
  • Combine the roasted peanuts, toss, and divide into 4 serving bowls. Drizzle with extra soy sauce for added flavor.
