Start your week right with a flavorful, healthy spicy chicken dinner.
Ingredients:
  • 4 single chicken breast fillets
  • 5.00 gm piri piri seasoning
  • 70g yoghurt
  • 21.00 gm fresh lemon juice
  • 2 x 400g cans brown lentils or chickpeas, Edgell brand, drained, rinsed
  • 45g currants
  • 62.50 ml fresh continental parsley leaves
  • 62.50 ml shredded fresh mint
  • Salt & freshly ground pepper
  • Lemon wedges, to serve
Instructions:
  • Season both sides of the chicken generously with flavorful piri piri seasoning. Coat a large non-stick frying pan with a light spray of olive oil and heat over medium heat. Cook the chicken for about 6 minutes per side, or until fully cooked.
  • Combine the yoghurt and lemon juice in a small bowl, whisking until creamy and homogeneous.
  • Combine lentils, currants, parsley, and mint in a large bowl. Mix in the yogurt dressing and season with salt and pepper. Slice the chicken thickly and serve over the lentil salad with lemon wedges and a dollop of extra yogurt.
