Try a flavorful sweet and spicy chicken burger with zesty coriander sauce.
Ingredients:
  • 150g chicken breast
  • 40.00 ml Low Fat Greek yoghourt
  • 40.00 ml Sriracha hot chilli sauce
  • 28.60 gm honey
  • 1 clove garlic, crushed
  • 1 lime, rind finely grated & juiced
  • Olive oil spray
  • 4 wholegrain rolls, halved and toasted
  • 1 baby butter lettuce, leaves separated and rinsed
  • 2 tomatoes, thinly sliced
  • 82.50 ml Low Fat Greek yoghourt
  • 40.00 ml chopped coriander
  • 1 spring onion, finely chopped
Instructions:
  • Sandwich the chicken fillets between freezer wrap and gently pound them with a rolling pin to slightly flatten.
  • In a bowl, mix together Jalna, chili sauce, honey, garlic, and lime zest. Add the chicken and ensure it is evenly coated. For deeper flavor, refrigerate for a few hours or overnight.
  • Mix together Jalna, coriander, and spring onion in a bowl. Drizzle with 1-2 teaspoons of lime juice and season with salt and pepper to taste.
  • Preheat the barbecue grill or char-grill pan and lightly coat with oil spray. Grill the chicken for 2-3 minutes on each side until fully cooked. Remove from the heat.
  • On a serving plate, assemble by placing the base of each roll, topping with lettuce, tomato, a piece of chicken, and spooning over the sauce. Finish by adding the remaining roll half on top. Serve and enjoy!
