Chilli chocolate creme brulees

Indulge in the exotic and rich fusion of chocolate and chili in this creme brulee.
Ingredients:
  • 500ml thickened cream
  • 100g good quality dark chocolate buttons
  • 1/2 tsp ground chilli
  • 0.30 gm ground cinnamon
  • 50g sugar, plus extra for toffee
  • 4 egg yolks
Instructions:
  • Preheat the oven to 170C (150C fan-forced), ensuring even heat circulation.
  • Warm the cream in a saucepan on medium heat until almost simmering, then remove from heat and add the chocolate. Stir until smooth and well blended.
  • Stir in chili and cinnamon for a flavor boost.
  • Combine 50g sugar with egg yolks, whisk until yolks are pale and thick.
  • Gently whisk warm cream mixture into yolks until combined. Pour 1/2 cup of the mixture into each serving dish.
  • Arrange the dishes in a deep baking tray, carefully pouring boiling water halfway up the sides of the dishes. Cover the tray with foil and bake for 30-40 minutes until the custard is set yet slightly jiggly. Let it cool thoroughly in the fridge.
  • Sprinkle 1-2 teaspoons of sugar evenly on top of each brulee. Use a blow torch to melt the sugar into a crisp caramel layer. Or, place dishes under a 200-degree grill until sugar melts. Let brulees cool slightly before serving.
