Chilli salted chocolate and ginger honeycomb

Spice up your holiday gifts with this gourmet chili chocolate recipe featuring salty chocolate and ginger honeycomb.
Ingredients:
  • 335g (1 1/2 cups) white sugar
  • 125ml (1/2 cup) cold water
  • 53.60 gm golden syrup
  • 5.00 gm butter, melted
  • 2.50 gm bicarbonate of soda
  • 2.50 gm ground ginger
  • 1.20 gm sea salt
  • 200g dark chocolate
  • Pinch of sea salt
  • Pinch of chilli flakes
  • 50g flaked almonds, toasted
Instructions:
  • Prepare a baking tray with baking paper. Combine sugar, water, and golden syrup in a heavy-based saucepan. Melt over low heat without stirring until sugar dissolves. Increase to medium heat and boil for 8-10 minutes until golden brown and reaches 154C on a sugar thermometer. Stir in butter and swirl the pan.
  • Remove the pan from heat and stir in the bicarbonate of soda, ginger, and salt - the mixture will foam up. Pour the mixture onto the prepared tray and tilt the pan to evenly cover the surface.
  • Gently tap mixture on work surface to settle, then allow it to cool completely.
  • Add the chocolate to a microwave-safe bowl and heat on high for 1 minute. Stir well. Microwave in 10-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  • Pour the chocolate mixture over a pan and smooth the surface. Combine salt and chili in a bowl, then sprinkle the chili salt and nuts over the chocolate. Set it aside to set. Break the honeycomb into pieces, and place them in gift bags. Tie the bags to seal, and enjoy within 2-3 days.
