Salted toffee chilli almonds

Spicy-sweet almonds - ideal cocktail snack.
Ingredients:
  • 350g oven-roasted almonds
  • 110g caster sugar
  • 1.20 gm sea salt flakes
  • 1 tsp dried chilli flakes
  • 20g butter
Instructions:
  • Prepare a baking tray with baking paper. In a saucepan over medium-high heat, mix almonds, sugar, salt, chilli, and 1/2 cup (125ml) water. Stir continually for 5 minutes until the sugar dissolves. Continue cooking and stirring for another 5 minutes until the liquid evaporates and the sugar caramelizes. Add the butter, remove from heat, and stir to combine.
  • Spread the warm almond mixture evenly on the lined tray. Use 2 forks to separate the almonds gently. Let it rest for 30 minutes to firm up.
