Chilli lamb mini sausage rolls

Delicious grown-up party sausage rolls.
Ingredients:
  • 1 tsp dried chilli flakes
  • 18.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 4 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 2.40 gm salt
  • 6.25 gm sweet paprika
  • 800g lamb mince
  • 187.50 ml fresh breadcrumbs
  • 2 eggs, lightly beaten
  • 65.00 gm hot chilli sauce
  • 3 sheets frozen puff pastry, partially thawed, halved
  • 18.00 gm sesame seeds
  • 85.80 gm tomato sauce
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and line 2 baking trays with baking paper.
  • Heat oil in a frying pan over medium heat and sauté onion and garlic until softened. Stir in cumin, coriander, chili flakes, salt, and 2 teaspoons of paprika; cook until fragrant. Transfer mixture to a large heatproof bowl and allow to cool for 10 minutes.
  • Combine mince, breadcrumbs, half the egg, and 1 tablespoon chilli sauce with the onion mixture. Mix until well combined. Shape 1/2 cup of the mince mixture into a sausage shape. Place it along one long side of a pastry half. Brush the opposite edge with the remaining egg. Roll up the pastry, starting from the mince side, to seal the filling inside. Cut it into 4 pieces and place them seam-side down on the prepared trays. Repeat this process to make a total of 24 rolls.
  • Mix together sesame seeds and the remaining paprika in a small bowl. Brush the tops of the pastry with the leftover egg and sprinkle with the sesame mixture. Bake for 25 to 30 minutes, rotating the trays halfway through, until golden and puffed. Allow to stand for 5 minutes before serving.
  • In a small bowl, mix together the tomato sauce and the remaining chili sauce. Serve the sausage rolls with the sauce on the side.
