Make Mexican-inspired beef stuffed sweet potatoes for a delicious family meal.
Ingredients:
  • 6 gold sweet potatoes
  • 9.20 gm olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 5.00 gm smoked paprika
  • 500g 3-Star Beef Mince
  • 300g jar mild salsa
  • 400g can black beans, drained, rinsed
  • 300g can corn kernels, drained
  • 150g cherry tomatoes, quartered
  • 120g sour cream
  • Coriander leaves, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 200C. Pierce sweet potatoes with a fork, wrap individually in foil, and bake on a tray for 1 hour until tender. Allow to cool for 15 minutes before serving.
  • Heat oil in a large saucepan over medium heat. Sauté onion until softened for about 3 minutes. Add garlic and paprika, cook until fragrant for about 1 minute. Brown the beef by breaking up lumps with a wooden spoon for about 5 minutes. Stir in salsa and beans and cook until slightly thickened for about 2 minutes. Season to taste.
  • Carefully open the sweet potatoes lengthwise without fully separating them. Stuff them with the chili con carne mixture. Garnish with corn, tomato, sour cream, and coriander. Accompany with mixed salad leaves.
