Spiced beef short ribs cooked to perfection in a rich sauce, served with sour cream and choice of tortillas or rice. Ready in just 10 minutes!
Ingredients:
  • 1.5kg beef short ribs
  • 1 red capsicum, deseeded, cut into 2.5cm pieces
  • 1 red onion, coarsely chopped
  • 500ml (2 cups) Organic Beef Liquid Stock
  • 180g packet Recipe Base Chilli Con Carne
  • 400g can diced tomatoes
  • 400g can red kidney beans, rinsed, drained
  • Fresh coriander sprigs, to serve
  • Lightly charred flour tortillas, to serve
Instructions:
  • In a flameproof casserole dish over medium-high heat, warm 1 tbsp oil until shimmering. Sear half of the ribs, turning occasionally, until nicely browned, about 6-8 minutes. Transfer to a bowl and repeat with the remaining ribs.
  • In the same dish, warm the remaining oil. Mix in the capsicum and onion; sauté for 4-5 minutes until softened. Incorporate the stock, recipe base, and tomatoes, stirring well. Reintroduce the ribs, lower the heat, cover, and let it simmer gently for 2 hours until tender. Stir occasionally. Finally, add the kidney beans and cook for an additional 2-3 minutes until heated through.
  • Sprinkle coriander over the ribs and season to taste. Serve alongside sour cream and tortillas.
