Chilli con carne meatballs

Easy and flavorful meatballs with a kick of paprika and chili powder. Customize with herbs, spices, or citrus zest. Serve with charred chili for extra heat. A must-try for meatball lovers!
Ingredients:
  • 2 spring onions
  • 1 red pepper
  • 160g brown basmati rice
  • 3 sprigs fresh coriander
  • 200g lean minced beef
  • ½ teaspoon sweet smoked paprika
  • ¼ teaspoon chilli powder
  • olive oil
  • ½ teaspoon cumin seeds
  • 1 400g tin plum tomatoes
  • 1 400g tin black beans
  • 2 fresh green chillies
  • 2 tablespoons natural yoghurt
  • 1 lime
Instructions:
  • - Boil rice in salted water until tender, drain. Season with black pepper, cover, and set aside. - Slice spring onions, chop pepper, and coriander. Sauté in oil until softened. - Mix beef with paprika, chili powder, salt, and pepper. Form into 6 balls. - Cook spring onions, pepper, coriander stalks, and tomatoes with water in a saucepan. - Grill chilies until blackened. Brown meatballs with cumin seeds in a pan. - Add meatballs to tomato sauce, cook until thickened. - Mix coriander leaves into rice. Serve with meatballs, beans, blackened chili, yogurt, and lime wedge.
