Low-carb meal with sweet corn, spicy pork, and creamy avocado.
Ingredients:
  • 4 corn cobs, husks and silks removed, halved crossways
  • 25g butter, softened
  • 20.00 ml finely chopped fresh coriander
  • 1 ripe avocado, halved, stone removed, peeled
  • 60ml (1/4 cup) 97 per cent fat-free diet sour creme (Pauls brand)
  • 3.60 gm salt
  • 1 tsp ground oregano
  • 1/2 tsp cayenne pepper
  • 13.80 gm vegetable oil
  • 350g pork fillet, halved crossways
Instructions:
  • In a pot of bubbling salted water, cook the corn for 5 minutes or until tender. Drain and put back in the pot. Mix in butter and coriander, then cover to keep warm. Next, puree the avocado and sour cream in a food processor until smooth and transfer to a bowl.
  • Mix salt, oregano, and cayenne pepper on a plate. Press pork into the seasoning. Heat oil in a non-stick pan over medium-high heat. Cook pork for 5 minutes on each side until done. Rest covered in foil for 5 minutes before serving.
  • Cut pork fillet against the grain into 2cm-thick slices. Plate the pork and top it with avocado cream before serving with corn.
