Chilli tofu zoodles

Whip up a quick and delicious 15-minute vegetarian dinner!
Ingredients:
  • 36.40 gm chilli-infused extra virgin olive oil
  • 300g firm tofu, cut into 1cm pieces
  • 500g Zucchini Noodles* (see tip)
  • 1 carrot, peeled, cut into long matchsticks
  • 1 long red chilli, thinly sliced
Instructions:
  • In a large frying pan, heat half of the oil over medium-high heat. Cook the tofu, flipping occasionally, for 5 minutes or until it turns golden brown. Transfer to a plate.
  • Toss zucchini in the pan and cook for 2 minutes until heated through. Add carrot and toss to combine.
  • Combine the tofu with the zucchini mixture and toss together.
  • Sprinkle chili and drizzle with the remaining oil, then season generously.
