Sweet chilli tofu burger

Irresistible tofu burger with sweet chili, ginger, and soy flavors, topped with creamy avocado and fresh cucumber for all food lovers.
Ingredients:
  • 44.00 gm sweet chilli sauce plus extra to serve
  • 15.90 gm soy sauce
  • 1 tsp finely grated fresh ginger
  • 375g firm tofu, drained
  • 13.80 gm olive oil
  • 1 large onion, thinly sliced
  • 420g loaf Turkish bread, cut into 4 pieces, halved horizontally
  • 1 small avocado, halved, stone removed
  • 2 Lebanese cucumber, peeled into ribbons
Instructions:
  • In a shallow rectangular dish, mix together the sweet chilli sauce, soy sauce, and ginger. Cut the tofu into 4 pieces by halving it crossways and then horizontally. Place the tofu pieces in the marinade, ensuring they are well coated. Cover and refrigerate for 1 hour.
  • Heat 1 teaspoon of oil in a large frying pan over medium-high heat. Add the onion and cook covered for 8 minutes, stirring occasionally. Remove from pan and set aside.
  • After cooking the tofu, wipe the pan clean, then heat up the remaining oil over medium heat. Remove the tofu from the marinade and cook for 2 minutes on each side until golden.
  • - Toast the bread until golden brown. - Spread the creamy avocado over half of the slices. - Layer on the crisp cucumber, silky tofu, and zesty onion. - Serve with the top bread slice on the side and a drizzle of sweet chili sauce, if preferred.
