Chilli tofu zoodles

Whip up a quick and delicious vegetarian dinner in a flash!
Ingredients:
  • 36.40 gm chilli-infused extra virgin olive oil
  • 300g firm tofu, cut into 1cm pieces
  • 500g Zucchini Noodles* (see tip)
  • 1 carrot, peeled, cut into long matchsticks
  • 1 long red chilli, thinly sliced
Instructions:
  • In a large frying pan over medium-high heat, heat half of the oil. Cook the tofu, turning occasionally, until golden brown, about 5 minutes. Transfer to a plate.
  • Toss zucchini in the hot pan for 2 mins until just heated through. Add carrot and mix well.
  • Combine the tofu with the zucchini mixture and gently toss together.
  • Sprinkle the chili and drizzle with the remaining oil, then season to taste.
