Delicious buttery almond cookies, perfect for Chinese New Year celebrations, made with almond flour for a rich nutty taste.
Ingredients:
  • 1 1/3 cups of almond flour , lightly packed
  • 1 cup of unsalted butter, chilled and cut into cubes
  • Pinch of kosher salt
  • 2 eggs
  • 1 teaspoon of almond extract
  • 1 3/4 cups of flour
  • 1 cup + 2 tablespoons of sugar
  • 1/2 teaspoon of baking soda
  • Thinly sliced almonds
Instructions:
  • In an electric mixer with a paddle attachment, combine almond flour, salt, and butter. Beat on medium speed for 3 minutes until mixture is coarse and chunky.
  • Incorporate one egg and almond extract on low speed until just mixed.
  • Sift the flour, sugar, and baking soda into the mixture and mix on low speed until just combined.
  • Chill the dough: Flatten it into a disc, wrap in plastic wrap, and refrigerate for two hours.
  • Preheat the oven to 325°F and line a baking sheet with parchment paper.
  • Whisk the leftover egg: In a small bowl, whisk the remaining egg.
  • Shape the dough into 3/4-inch balls, then gently press them onto the cookie sheet about an inch apart to form coin shapes.
  • Press one slivered almond into the center of each cookie, and brush each cookie with the egg using a pastry brush or your finger for a lacquered appearance while baking.
  • Bake at 325°F for 13 to 15 minutes until edges lightly browned. Cool on sheet on wire rack.
