Chinese Chicken and Ginger Steamed Soup Dumplings

Delicious Chinese soup dumplings with savory chicken, ginger, sesame oil, and soy sauce filling - perfect for entertaining guests.
Ingredients:
  • 0.75 cup chicken stock, or more if needed
  • 1 teaspoon agar-agar flakes
  • 1 piece fresh ginger root, peeled
  • 1 spring onion, sliced
  • 0.75 cup warm water
  • 9 ounces ground chicken
  • 2 tablespoons soy sauce
  • 2 teaspoons cooking wine
  • 1 teaspoon sesame oil
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon freshly ground black pepper
  • 1.75 cups all-purpose flour
  • 0.66666668653488 cup warm water
  • 1 tablespoon vegetable oil
Instructions:
  • In a saucepan, gently heat chicken stock and agar-agar flakes until the agar-agar is dissolved, for 1 to 2 minutes. Then, refrigerate until set, for 15 to 30 minutes.
  • Gently crush ginger with the flat side of a knife to release its flavor. Combine ginger and spring onion in 3/4 cup warm water in a bowl; massage with your fingers to infuse water with their essence. The water will take on a light green hue. Strain and allow the infused water to cool.
  • Combine chicken, soy sauce, cooking wine, sesame oil, sugar, and black pepper in a bowl. Slowly incorporate the chilled ginger-spring onion water.
  • Finely chop the agar mixture and fold it into the chicken mixture. Refrigerate, covered, for a minimum of 4 hours to chill.
  • In a large bowl, combine flour with 2/3 cup of warm water and vegetable oil to form a smooth dough. Cover with plastic wrap and let it rest for 10 minutes. Cut the dough into small pieces, roll them into balls, and flatten into rounds that are slightly thicker in the center.
  • Place a generous amount of the flavorful chicken mixture in the middle of each piece of dough. Gently bring the sides together to create a beautiful bag shape and twist to ensure a secure seal.
  • Place the dish in a bamboo steamer and steam over high heat in a skillet with about 1 inch of water until the chicken is cooked through, 10 to 15 minutes.
