Chinese meatballs with hoisin noodles

Delicious Asian meatballs and noodles - perfect for family meals.
Ingredients:
  • 89.10 gm hoisin sauce
  • 48.80 gm oyster sauce
  • 1 garlic clove, crushed
  • 2cm fresh ginger, peeled, finely grated
  • 500g beef mince
  • 1 egg
  • 125.00 ml fresh breadcrumbs
  • 49.50 gm sesame seeds
  • 450g packet hokkien noodles
  • 36.80 gm vegetable oil
  • 1 medium red capsicum, chopped
  • 1 bunch baby bok choy, roughly chopped
Instructions:
  • Mix the sauces, garlic, and ginger in a small bowl. In a separate bowl, combine mince, egg, breadcrumbs, and 2 tablespoons of the sauce mixture. Spread sesame seeds on a plate. Shape the mince mixture into meatballs using about a level tablespoon each (you should get around 20 meatballs). Roll the meatballs in sesame seeds.
  • Place noodles in a medium heatproof bowl and cover with boiling water. Let stand for 3 minutes or until soft. Separate noodles with a fork and drain.
  • Heat half of the oil in a large frying pan over medium heat and cook the meatballs, turning occasionally, until cooked through, for about 6 to 8 minutes. Transfer the cooked meatballs to a plate lined with paper towel.
  • Preheat a wok over high heat, then add the remaining oil and swirl to coat. Stir-fry the capsicum for 1 minute, then add the bok choy and stir-fry for another minute. Next, add the noodles, remaining sauce mixture, and 2 tablespoons of cold water. Stir-fry for 2 minutes until heated through, then add the meatballs and toss to combine. Serve and enjoy!
