Whip up a quick and delicious pork noodle stir fry for dinner.
Ingredients:
  • 450g packet fresh thin hokkien noodles
  • 36.40 gm peanut oil
  • 500g pork fillet, thinly sliced
  • 2 garlic cloves, crushed
  • 2 green onions, thinly sliced diagonally
  • 2 tsp sesame oil
  • 4cm piece ginger, peeled, shredded
  • 200g snow peas, halved diagonally
  • 1 bunch asparagus, cut into 4cm lengths
  • 100.65 gm Oyster Sauce
Instructions:
  • Place noodles in a heatproof bowl and cover with boiling water. Let stand until tender, about 3 minutes. Drain and set aside.
  • 1. Preheat a wok over high heat until smoking. Add 2 teaspoons of peanut oil and half the pork, stir-frying for 1 to 2 minutes until pork is nearly cooked through. Transfer to a plate and repeat with another 2 teaspoons of oil and the rest of the pork.
  • Pour the last tablespoon of peanut oil into the hot wok. Sizzle until sizzling. Toss in garlic, onions, and a drizzle of sesame oil. Stir-fry for just 30 seconds.
  • Toss ginger, snow peas, and asparagus in the wok and stir-fry for 1 minute. Pour in the stock, cover, and cook until vegetables are vibrant green, about 1 minute.
  • Add the pork back to the wok along with the noodles and oyster sauce. Stir-fry for 1 to 2 minutes until everything is heated through. Serve hot.
