Impress with tasty Chinese pork sliders for effortless entertaining.
Ingredients:
  • 40.00 ml rice vinegar
  • 40.00 gm caster sugar
  • 1 carrot, cut into matchsticks
  • 2 Lebanese cucumbers, seeds removed, cut into matchsticks
  • 60ml sriracha
  • 75g mayonnaise
  • 20 small (7cm) burger buns, split
  • 300g good-quality chicken liver pate
  • 600g Chinese roast pork belly (see notes), sliced
  • 250.00 ml coriander leaves
  • 250.00 ml micro cress (see notes)
Instructions:
  • In a bowl, mix together vinegar, sugar, and 1 tsp salt until the sugar dissolves. Add the carrot and cucumber, and let sit for a minimum of 10 minutes to pickle. Drain thoroughly and keep aside.
  • Mix spicy sriracha with creamy mayonnaise in a bowl and let sit.
  • Toast the buns until lightly golden, generously spread each with pâté. Fill with pork belly slices, top with coriander, micro cress, pickled carrot and cucumber. Drizzle with chili mayo, and finish with bun tops.
