Chinese Pork Rib Tips

Tender Chinese pork rib tips cooked in a delicious sweet and tangy ginger soy sauce with rock sugar and vinegar.
Ingredients:
  • 0.5 tablespoon vegetable oil
  • 4 slices fresh ginger
  • 2 pounds pork loin rib tips
  • 1 cup boiling water, or more if needed
  • 2 tablespoons rock sugar, or to taste
  • 1.5 tablespoons white vinegar
  • 1 tablespoon soy sauce
Instructions:
  • Heat a cast iron pan until sizzling hot. Add oil, ginger, and rib tips in that sequence. Stir-fry until ribs are golden all around, around 5 minutes.
  • Cover the ribs with boiling water and cook with lid on for 10 minutes. Remove lid and cook until water is nearly absorbed, 5 to 20 minutes more. Ensure ribs do not burn.
  • Combine rock sugar, vinegar, and soy sauce, stirring until mixture thickens, for 1 to 2 minutes.
