Slice tender roast pork in flavorful Chinese marinade.
Ingredients:
  • 3 (350g each) pork fillets, trimmed
  • 36.40 gm peanut oil
  • 2 large carrots, trimmed, peeled, cut into matchsticks
  • 2 red capsicums, thinly sliced
  • 200g snow peas, trimmed, thinly sliced
  • 6 green onions, cut into 6cm pieces
  • 2cm piece ginger, grated
  • 89.10 gm hoisin sauce
  • 1/2 tsp Chinese five spice (see note)
  • 33.00 gm sweet chilli sauce
  • 9.60 gm less salt soy sauce
Instructions:
  • Create a flavorful marinade by mixing hoisin sauce, five spice, brown sugar, sweet chili sauce, and soy sauce in a glass bowl.
  • Preheat oven to 200C. Place pork on a large plate and generously coat it with half of the marinade. Thin out the remaining marinade with 1 tablespoon of cold water and set it aside for later use.
  • Place the pork on a wire rack in a ceramic baking dish and roast for 25-30 minutes, or until fully cooked.
  • Heat a wok over medium heat. Add oil and swirl to coat the pan. Add carrots and stir-fry for 1 minute. Add capsicums, snow peas, green onions, garlic, and ginger. Continue to stir-fry for 2 to 3 minutes until tender.
  • Slice 2 pork fillets thinly. Set aside 1 fillet for another recipe (Pork nasi goreng). Divide vegetables among 5 plates, reserving 1 plate for Night 2. Top 4 plates with sliced pork, drizzle with remaining marinade, and serve.
