Classic Chinese Vegetarian Stir-Fry: Eggs, tomatoes, and green onions unite for a tasty dish.
Ingredients:
  • 1 tablespoon canola oil
  • 3 large eggs
  • 2 green onions, chopped
  • 3 medium tomatoes, cut into 1-inch wedges
  • 0.5 teaspoon white sugar
Instructions:
  • In a large skillet over medium-high heat, heat oil. Add eggs and green onions, cooking and stirring until eggs are almost set, around 10 seconds. Quickly transfer eggs to a bowl.
  • Place the tomatoes in the skillet and saute until they release their juices and slightly wilt, approximately 5 minutes. Mix in salt and sugar. Put the eggs back into the skillet and cook, stirring occasionally, until the eggs are fully set, about 2 to 3 minutes.
