Transform boiled eggs with Chinese black tea, star anise, cinnamon, and tangerine zest for a stunning marbled effect - Tea Eggs.
Ingredients:
  • 3 cups water
  • 2 tablespoons black tea leaves
  • 1 tablespoon soy sauce
  • 1 tablespoon black soy sauce
  • 1 tablespoon tangerine zest
  • 1 (2 inch) piece cinnamon stick
  • 2 pods star anise
  • 1.25 teaspoons salt, divided
  • 8 large eggs
Instructions:
  • In a large saucepan, mix 3 cups water with tea leaves, soy sauce, black soy sauce, zest, cinnamon stick, star anise, and 1/4 teaspoon salt. Bring to a boil, then lower the heat, cover, and simmer for 3 hours.
  • In a medium pot, immerse eggs in cold water along with 1 teaspoon salt. Boil, then lower heat and simmer for 20 minutes. Drain and let the eggs cool. Gently crack the shells of the cooled eggs using the back of a spoon; keep the shells on.
  • Take the saucepan off the heat and gently incorporate the eggs. Allow them to steep for a minimum of 8 hours, or for a more intense flavor, up to 1 1/2 days.
