Celebrate Chinese New Year with these classic snacks.
Ingredients:
  • 8 eggs
  • 60ml (1/4 cup) dark soy sauce
  • 1 black tea bag
  • 3 whole star anise
  • 1 cinnamon stick (see note)
  • 1 tsp whole black peppercorns
  • 2 strips orange rind, white pith removed
Instructions:
  • In a medium saucepan, gently simmer the eggs in water for 2 minutes. Transfer the eggs to a plate using a slotted spoon. Crack the egg shells all over by gently tapping them on a surface with the help of tongs. Reserve the water in a jug.
  • Place the eggs back in the pan. Pour in soy sauce, add tea bag, star anise, cinnamon stick, peppercorns, and orange rind. If the eggs are not covered, pour in some reserved water. Gently simmer over low heat for 2 hours, adding more reserved water as needed to keep the eggs covered. Let it cool and then drain.
  • Peel the eggs and let them come to room temperature before serving.
