Create a flavorful South China-style tomato egg drop soup with green onion and sesame oil.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 large ripe tomatoes, quartered
  • 2 cups water, or more as needed
  • 2 tablespoons minced green onion
  • 0.5 teaspoon sesame oil
  • 1 pinch white sugar, or to taste
  • salt to taste
Instructions:
  • In a pot over medium-high heat, heat oil. Saute tomatoes until mostly melted, 5 to 10 minutes. Add water and bring to a boil. Reduce heat to low and cook until flavors are well blended, stirring occasionally for 5 to 10 minutes. Slowly and constantly stir in eggs for 1 minute. Add green onion and cook for 30 seconds. Lastly, stir in sesame oil, sugar, and salt.
