Quick and comforting Vietnamese braised beef with noodles, perfect for cozy evenings. Prep in the morning for a delicious dinner.
Ingredients:
  • 1.2kg No Added Hormone Beef Brisket
  • 2 carrots, quartered lengthways, cut into 3cm lengths
  • 2 garlic cloves, crushed
  • 3 stalks lemongrass, finely chopped
  • 91.58 gm tomato paste
  • 48.80 gm fish sauce
  • 1 tsp Chinese five-spice powder
  • 765.00 gm salt-reduced beef stock
  • 200g packet dried rice noodles
  • 750.00 ml bean sprouts, trimmed
  • 1/2 small red onion, thinly sliced
  • Fresh mint leaves, to serve
  • Fresh coriander leaves, to serve
  • Chilli oil, to serve
  • Lime wedges, to serve
Instructions:
  • Prepare the beef by removing any fat and sinew, then cut into 3cm pieces. Combine beef, carrot, garlic, lemongrass, tomato paste, soy sauce, five spice, and stock in a slow cooker. Cover and cook on LOW for 4 hours (or on HIGH for 2 hours) until perfectly tender.
  • Prepare noodles according to the instructions on the packet, then drain them. Distribute the noodles evenly among serving bowls, and layer with the beef mixture. Top with bean sprouts, onion, mint and coriander. Drizzle with chili oil and serve with lime wedges.
