Succulent stir-fried chicken with zucchini and flavorful mushrooms make this Chinese-inspired dish a simple and delicious weeknight dinner option.
Ingredients:
  • 2 (5 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1.25 cups cornstarch, or as needed
  • 1 tablespoon sesame oil
  • 1 tablespoon canola oil
  • 1 (8 ounce) package shiitake mushrooms, sliced
  • 1 (8 ounce) package maitake mushrooms, roughly chopped
  • 2 large zucchini, chopped
  • 1 teaspoon low-sodium soy sauce, or to taste
  • 1 teaspoon chile paste, or to taste
Instructions:
  • Coat chicken lightly with cornstarch in a zip-top bag.
  • In a hot pan, combine sesame oil and canola oil. Saute chicken until golden, around 5-7 minutes. Set chicken aside. Brown mushrooms and zucchini in the same pan, adding more oil if necessary, until tender, about 3 minutes. Return chicken to the pan, then stir in soy sauce and chili paste to your liking. Cook for an additional 2 minutes.
