Spicy chipotle cauliflower rice - perfect for low-carb diets, picky eaters, and cauliflower lovers alike.
Ingredients:
  • 1 (16 ounce) package frozen cauliflower
  • 0.33333334326744 cup water
  • 0.5 cup chipotle cooking sauce (such as Herdez®)
  • 2 tablespoons recaito
  • 1 tablespoon tomato paste
  • 1 tablespoon garlic powder
Instructions:
  • Blend cauliflower in a food processor until it resembles rice grains.
  • In a nonstick pan or cast iron skillet, saute cauliflower 'rice' in water until golden brown and tender, for 5 to 8 minutes. Add chipotle sauce, recaito, tomato paste, and garlic powder. Cook until thickened, about 20 minutes, stirring occasionally.
