Spicy chipotle marinade adds balanced kick to chicken and meats.
Ingredients:
  • 3 chipotle peppers in adobo sauce
  • 2 garlic cloves
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon paprika
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon ground cumin
  • 2 tablespoons lime juice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons honey
  • 0.25 cup balsamic vinegar
  • 0.25 cup olive oil
  • kosher salt to taste
  • 4 skinless chicken drumsticks
Instructions:
  • Combine chipotle peppers, garlic, cayenne pepper, paprika, black pepper, cumin, lime juice, Worcestershire sauce, honey, vinegar, and olive oil in a blender. Blend until smooth. Reserve 1/4 of the marinade. Season each chicken drumstick with a pinch of kosher salt. Place the drumsticks in a resealable plastic bag and pour in the marinade. Seal the bag and refrigerate for at least 2 hours.
  • Prepare your outdoor grill by heating it to medium-high heat and lightly oiling the grate. Take the chicken out of the marinade, allowing any excess to drip off, and dispose of the leftover marinade.
  • Grill the chicken legs until fully cooked through, about 8 minutes per side. The internal temperature near the bone should reach 165 degrees F (74 degrees C). Baste the legs with marinade, cover, and grill for an additional 2 minutes per side to glaze.
