Spicy chicken soup with garlic and chipotle peppers for a flavor-packed twist.
Ingredients:
  • 1 tablespoon olive oil, or more if needed
  • 1 onion, minced
  • 1 head garlic, minced, or to taste
  • 2 (14.5 ounce) cans chicken broth
  • 4 skinless, boneless chicken breast halves, cut into cubes
  • 1 (7 ounce) can chipotle peppers in adobo sauce (such as Embasa®), chopped, adobo sauce reserved, or to taste
  • 2 tomatoes, diced
  • 1 bunch fresh cilantro (leaves only), chopped
Instructions:
  • In a large saucepan over medium heat, sauté onion and garlic in olive oil until softened, for about 5 to 7 minutes.
  • In a saucepan, gently simmer chicken broth with chicken until fully cooked, covered, for approximately 10 minutes or until chicken is no longer pink in the center.
  • Combine chopped chipotle peppers with half the reserved adobo sauce in a bowl; stir. In a separate bowl, mix together tomatoes and cilantro.
  • Gradually swirl in the chipotle mixture into the broth, tasting as you go until you reach your desired level of spiciness. Take the saucepan off the heat, then gently mix in the tomatoes and cilantro into the soup.
