Ingredients:
  • 2 pounds boneless, skinless chicken breasts, trimmed
  • 3 tablespoons Mazola® Corn Oil
  • 1 medium onion, sliced
  • 2 cloves garlic, crushed
  • 2 canned chipotle peppers in adobo sauce
  • 0.5 cup warm water
  • 1 tablespoon chicken-flavored bouillon powder
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • Salt and pepper to taste
  • 1 teaspoon Chopped fresh cilantro
Instructions:
  • Dry the chicken with paper towels. Cut the chicken breasts into 2 to 3 ounce portions and place them in a 6-quart slow cooker.
  • In a large skillet over medium-high heat, sauté onions in oil until they are tender and starting to caramelize, about 5 to 8 minutes.
  • Lower the heat and introduce the garlic into the pan, allowing it to cook for 1 minute.
  • Combine the cooked onions, chipotle chilies, water, and bouillon powder in a blender or food processor. Blend until smooth, then pour the mixture over the chicken in the slow cooker and cover with the lid.
  • Cook the dish on HIGH for 2 to 3 hours, ensuring to stir it once, until the chicken is tender and reaches a minimum temperature of 170 degrees Fahrenheit.
  • Combine creamy sour cream and velvety cream cheese until velvety. Fold into the savory chicken blend. Season with salt and pepper to taste. Simmer on LOW for 15 to 20 minutes until warmed through.
  • Serve alongside fragrant rice, flavorful black beans, assorted crisp vegetables, and soft corn tortillas. Top off with fresh cilantro for a burst of herbaceous goodness.
