Spicy chicken soup with fresh tortillas and bold flavors from green chile and chipotle peppers.
Ingredients:
  • 8 (1 ounce) slices smoked bacon, cut into 1/2-inch strips
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (32 ounce) container chicken broth
  • 3 skinless, boneless chicken breasts
  • 1 (28 ounce) can diced tomatoes and mild green chile peppers (such as RO*TEL®)
  • 1 (14 ounce) can tomato sauce
  • 1 (14 ounce) can whole kernel corn
  • 3 chipotle peppers in adobo sauce, chopped, or to taste
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon ground cumin
  • 1.5 teaspoons dried cilantro
  • 3 (8 inch) flour tortillas, cut into strips
  • 1 (8 ounce) container sour cream
  • 0.5 cup shredded sharp Cheddar cheese
Instructions:
  • Fry bacon in a large skillet over medium heat until crispy, for around 5 minutes. Transfer to a paper towel to drain, keeping 1 tablespoon of the grease in the skillet. Saute onion and garlic in the skillet until the onion turns translucent, approximately 5 minutes.
  • In a large pot, bring chicken broth and chicken breasts to a boil. Cook for about 15 minutes, until the chicken breasts are no longer pink in the center. Remove the chicken breasts from the broth and let cool until easily handled.
  • Combine crispy bacon, fragrant onion, pungent garlic, juicy diced tomatoes, spicy green chile peppers, and flavorful tomato sauce into the savory chicken broth. Incorporate sweet corn, smoky chipotle peppers, a pinch of salt, a dash of pepper, earthy cumin, and fresh cilantro.
  • Preheat your oven to 350 degrees F (175 degrees C) and lay out the tortilla strips on a baking sheet.
  • Shred chicken breasts into bite-sized pieces and place them in the broth mixture. Simmer and stir until soup flavors meld, approximately 20 minutes.
  • Crisp tortilla strips in the preheated oven for about 5 minutes.
  • Pour the soup into bowls, add a dollop of sour cream, and sprinkle with tortilla strips and Cheddar cheese for a delicious finish.
