Spicy chicken tortilla soup with sautéed onions, peppers, corn, tomatoes, and black beans in flavorful broth. A family favorite!
Ingredients:
  • 1 teaspoon canola oil
  • 1 large onion, diced
  • 2 large jalapeno peppers, seeded and chopped
  • 1 (32 ounce) carton Swanson® Mexican Tortilla Flavor Infused Broth
  • 2 cups shredded cooked chicken
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup canned black beans, rinsed and drained
  • 0.5 cup frozen whole kernel corn
  • 2 tablespoons tomato paste
  • 1 cup Tortilla chips or strips
Instructions:
  • Heat oil in a large stockpot over medium-high heat. Saute onion and peppers until tender-crisp, about 2 minutes, stirring occasionally.
  • Combine broth, chicken, diced tomatoes, beans, corn, and tomato paste in a saucepan. Bring to a boil, then simmer on low for 5 minutes, stirring occasionally. Serve topped with crushed tortilla chips or strips.
