Elevate rib flavor with a fiery BBQ rub and sauce for irresistible barbecue.
Ingredients:
  • 1 tablespoon packed brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic pepper
  • 1/4 teaspoon ground ginger
  • 4 pounds pork loin back ribs (not cut into serving pieces)
  • 1/2 cup chipotle salsa
  • 1/4 cup chili sauce
  • 2 tablespoons orange marmalade
Instructions:
  • Combine all of the Southwestern Rub ingredients in a small bowl. Massage the mixture onto the ribs until evenly coated. Wrap the ribs tightly in plastic wrap and refrigerate for at least 4 hours, but no more than 12 hours.
  • Prepare your grill by heating coals or gas for indirect heat. For charcoal grills, position a drip pan under the grilling area and spread the coals around the edge of the firebox. Lay the ribs over the drip pan or the unheated side of the gas grill. Cover and grill over medium heat for 1 hour 30 minutes to 2 hours, turning periodically, until the ribs are tender.
  • Combine salsa, chili sauce, and marmalade in a small bowl. Use the mixture to glaze the ribs during the final 10 to 15 minutes of grilling. Heat the remaining salsa mixture until boiling, then simmer and stir for 1 minute. Cut the ribs into individual serving portions and serve with the salsa glaze.
