Try our irresistible Chipotle Salsa made with Roma tomatoes, fire-roasted tomatoes, and chopped chipotle peppers. Perfect for dipping with tortilla chips!
Ingredients:
  • 1 teaspoon olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 3 medium plum (Roma) tomatoes, chopped (1 cup)
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted tomatoes, undrained
  • 1 tablespoon chopped chipotle chiles in adobo sauce (from 7-oz can)
  • 1 cup loosely packed fresh cilantro leaves
  • Tortilla chips
Instructions:
  • Heat oil in a large skillet over medium heat. Sauté onion and garlic until onion is very soft, then add plum tomatoes and cook until they start to break down, about 4 to 5 minutes.
  • Combine fire roasted tomatoes and chipotle chiles, bring to a boil, then simmer uncovered for about 10 minutes, stirring occasionally until thickened. Remove from heat and let it cool slightly.
  • Combine salsa and fresh cilantro in a food processor or blender. Pulse until cilantro is finely chopped. Transfer to a serving bowl.
  • Enjoy the salsa alongside crispy tortilla chips.
