Effortless chipotle-citrus marinated chicken tacos topped with fresh onion and cilantro on mini tortillas, perfect for grilling.
Ingredients:
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 1 chipotle pepper in adobo
  • 3 cloves garlic, minced
  • 2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound boneless skinless chicken breasts
  • 1 small onion, diced
  • 1/4 cup chopped cilantro
  • 24 corn tortillas, street taco size
Instructions:
  • In a blender, combine lime juice, orange juice, olive oil, chipotle pepper, garlic, cumin, coriander, salt, and black pepper. Blend on high speed until smooth.
  • Transfer the marinade mix into a sealable plastic bag, then place the chicken breasts in the bag. Refrigerate and marinate for 3 hours.
  • Preheat the grill to 375°F (190°C).
  • Grill the marinated chicken breasts with the lid closed, turning once, until cooked through and juicy, about 6 to 8 minutes per side. Use an instant-read thermometer to ensure the internal temperature reaches 165 degrees F (74 degrees C). Discard the marinade.
  • Take the grilled chicken off the grill and allow it to rest for 5 minutes before slicing it into strips.
  • Warm tortillas on a griddle until soft. Pair them up and distribute chicken, onion, and cilantro evenly on each pair.
