Choc chip and peanut biscuits

Ingredients:
  • 180g butter, at room temperature, cubed
  • 165g brown sugar
  • 4.40 gm vanilla essence
  • 300g (2 cups) plain flour
  • 200g salted roasted peanuts, roughly chopped
  • 200g dark Choc Bits
Instructions:
  • Preheat the oven to 170°C or 150°C for fan-forced. Line 2 large baking trays with non-stick baking paper.
  • In a medium mixing bowl, use electric beaters to whip the butter and sugar until light and fluffy. Incorporate the egg and vanilla essence, continue beating until well combined. Gradually sift in the flour and bicarbonate of soda, then mix at a low speed until just combined.
  • Combine the peanuts and chocolate bits using a large metal spoon until evenly mixed. Spoon heaped tablespoons of the mixture onto the lined trays, spacing them 5cm apart. Flatten each one with your fingers until they are approximately 1.5cm thick.
  • Preheat your oven and bake the biscuits for 10 minutes. Rotate the trays then bake for an additional 7 minutes until the edges are a light golden brown. Let them cool on the trays for 5 minutes before transferring to wire racks to cool completely. Repeat with the rest of the biscuit mixture.
