Indulgent choc mint cheesecake, a festive showstopper. Chill for 6 hours before serving. Tips: Ensure gelatine and cream cheese are similar temps to avoid lumps.
Ingredients:
  • 250g Choc Ripple biscuits
  • 75g butter, melted, cooled
  • 500g cream cheese, chopped, at room temperature
  • 165g (3/4 cup) caster sugar
  • 1 tsp peppermint essence
  • 150ml thickened cream, at room temperature
  • Green food colouring, to tint
  • 7.50 gm gelatine powder
  • 131g pkt Oreo Double Stuff Mint cookies
  • 100g (1/2 cup) dark chocolate chips
Instructions:
  • Prepare a 20cm springform pan by lightly greasing it and lining the base and sides with baking paper.
  • Crush Choc Ripple biscuits in a food processor until finely chopped. Add butter and process until mixed. Press mixture into prepared pan evenly using a spoon or glass, leaving a 1cm gap from the rim. Chill in the fridge as you prepare the filling.
  • In a clean food processor, blend together cream cheese and sugar until smooth. Add peppermint essence, cream, and a touch of green food coloring for a light green hue. Continue processing, pausing to scrape down the sides as needed, until well combined.
  • In a small bowl, add 2 1/2 tbsp cold water. Sprinkle with gelatine and mix well. Create a double boiler by placing the small bowl inside a larger heatproof bowl. Pour boiling water into the larger bowl, reaching halfway up the side of the small bowl. Let it sit, stirring occasionally, for 5 minutes until gelatine dissolves. Cool the mixture, then add it to the cream cheese mixture and blend until combined. Transfer to a bowl.
  • Set aside 4 Oreos and finely chop the rest. Gently mix the chopped Oreos and 1/3 cup chocolate chips into the cream cheese blend. Transfer the mixture into the biscuit crust. Coarsely chop the set-aside Oreos and sprinkle along with the remaining chocolate chips on top. Chill in the fridge for approximately 6 hours until set. Serve and enjoy!
