Indulge in decadent chocolate slice classics for the perfect weekend treat!
Ingredients:
  • 150g Unsalted Butter, melted, cooled
  • 180.00 gm firmly packed brown sugar
  • 125.00 ml plain flour
  • 49.50 gm self-raising flour
  • 65.00 gm cocoa powder
  • 63.75 gm Desiccated Coconut
  • 375.00 ml Soft Icing Mixture
  • 20g salted butter, finely chopped
  • 40.00 gm boiling water
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease a 20cm x 30cm lamington pan and line it with baking paper, leaving a 2cm overhang on the long sides.
  • In a large bowl, combine butter, brown sugar, egg, and vanilla until smooth. Sift in flours and cocoa powder, then stir in 1/2 cup coconut. Spread mixture into prepared pan and bake for 25 to 30 minutes until firm to the touch.
  • Prepare Decadent Chocolate Icing: Combine sifted icing sugar and cocoa powder in a medium heatproof bowl. Mix in butter and boiling water until velvety smooth.
  • Spread the warm slice generously with icing and sprinkle with the remaining coconut. Allow it to cool completely in the pan before cutting it into pieces and serving.
